Meet Amy

WHERE IT ALL BEGAN

I have always known I wanted to make an impact on this world, but didn’t know how until I found my passion in nutrition and fitness. This all began in high school when I started running cross country. As I began to develop as a runner, I realized that the food I ate affected how I felt on and off the trails. As I began to take control of my nutrition and fitness, my image of myself changed. I felt empowered and accomplished things that I never could have imagined. I began to be proud of who I was and that seemed to seep into every area of my life. At that time I realized the positive impact I could have on this world was helping others take control of their health by eating in a way that supports their goals.

Education +

My educational journey began at the University of Portland, where I ran Division I Track. I transferred to Montana State University where I graduated with my degree in Nutrition and Dietetics. I then headed to Spokane, Washington to complete my Master’s Degree in Nutrition and Exercise Physiology at Washington State University. Through this program, I spent over 1200 hours with various populations gaining experience and knowledge to help you know how to eat healthy for your goals. This preparation allowed me to pursue my licensure as a Registered Dietitian. My journey has provided me with a large toolbox of knowledge and experiences to pursue my passion of working 1-on-1 with individuals to help them create lasting lifestyle changes. I have since then become a USAT Level 1 Triathlon Coach, Crossfit Level 1 Certification and ACSM Personal Training Certification so I can properly coach endurance athletes to improve their performance.

Amy’s Health Journey +

As I work with people to improve their lifestyle habits, I am continually working on mine as well. I am a new mom and triathlete and am constantly trying to find new and better ways to fuel myself in my athletic endeavors as well as my family. My favorite triathlon distance is the Half Ironman and have qualified for 3 World Championships! As a family, we love to cook, bake, and be outdoors in any way we can!

Some of My Favorites

I was the kid that kicked my feet to the side when I ran and ate strawberries dipped in sugar (like a lot of sugar) as a snack… so yea… there is hope for you too!

If I could travel anywhere I would go to any beach, Italy or Greece.

My mom taught me the basics of cooking, but Cooking Light Magazine taught me how to really cook.

My favorite races are half marathons and Half Ironmans. I haven’t done a full marathon or Ironman, but I likely will at some point!

Favorite Ice Cream: chocolate anything. The more chocolate the better!

My daily staples are peanut butter, chocolate milk, bananas, apples, carrots, eggs, and yogurt.

I am terrified of snakes!

My husband, Kevin, and I started dating in high school and have been best friends since.


 

Meet Sara

HOW IT ALL BEGAN

I have always loved being active whether that be through various sports growing up, hiking, running, and horseback riding. Combined with my love of food it’s no surprise I landed on a career as a registered dietitian! My daughter had various food intolerances and GI issues as a baby and toddler which led me to my love of research and problem solving with nutrition. Wading through a sea of misinformation proved difficult but made me more determined to learn as much as possible to help her and eventually others as well. I love how there are so many facets to dietetics and such diverse populations to work with, although my passion is with pediatrics! Helping kids and adolescents learn life long, healthful habits be it fueling for sport or learning how to build a balanced plate, is such a privilege and I am grateful for this opportunity!

I started at Colorado State University in 2002 as a double major in Equine Science and Agricultural Business thinking I wanted to get into equine genetics and breeding. I took an exercise physiology course and loved it, so I changed my major and moved back to Texas to pursue a degree in Physical Therapy. By the time I graduated in 2007 with my bachelor’s degree in Kinesiology and Exercise Science from the University of Houston, I realized I really wanted to continue working with horses but there wasn’t a place for Equine Physiologists unless you were a veterinarian. I became an Equine Massage Therapist, then a human massage therapist and moved to WA state with my husband. A few years later we started our family, so I stayed home with my kiddos while still working part time as a human and equine massage therapist. As my kids entered school full time, I decided to go back for my master’s degree at Washington State University in their Coordinated Program in Dietetics, Nutrition, and Exercise Physiology. I graduated in 2022, became a certified exercise physiologist, and obtained my dietetic licensure shortly after.

I have always been cognizant of fueling for my activities , although I have not been immune to body image concerns and societal standards. The amount of misinformation spread via social media and unrealistic body standards have fueled my passion to educate our younger generation as well as my adult clients on how to cater their diet to their own needs. I was fortunate to complete on of my internships with The Emily Program in Spokane. I learned so much about eating disorders, their triggers, and was drawn to the adolescents in the program. I have made it my mission to help others navigate diet culture, learn balance, and educate my pediatric clients so they grow up armed with the knowledge needed to live active and healthy lives!


Meet Elizabeth

Where it all began

Growing up on a wheat farm, food has always been part of my daily rhythm of life. I played sports growing up and ran cross country and track through college, but it wasn’t until I had the opportunity to work with a sports dietitian during a physiology internship in graduate school that I saw the impact that proper fueling can have on performance and health. I also discovered that I love teaching and working one-on-one with individuals to help them meet their unique goals while also looking at the long game of fostering a healthy relationship with food.

Like most first-year college students who like science and want to help people, I started college at Whitworth College (now University) wanting to be pre-med. I double-majored in Biology and Chemistry and ran cross country and track all four years. I realized my junior year that becoming a physician wasn’t for me but that I wanted to stay in higher education as a professor and/or coach. I packed up and moved to Duluth, Minnesota where I completed an accelerated master’s program in Exercise Physiology. I landed a summer internship as a physiology intern at the U.S. Olympic Training Center in Colorado Springs where one of my supervisors was a sports dietitian. Even though I had been an athlete for most of my life, that was the first time that I really made the connection between proper fueling and performance. I spent the next year as an AmeriCorps member working with food insecure populations in Duluth and then started working on my PhD at Virginia Tech. After four years, I completed my doctorate in Nutrition for Sport and Chronic Disease while also picking up my coursework to become a registered dietitian. After graduate school, I completed a one-year dietetic internship at the Mayo Clinic in Rochester, Minnesota and passed my board exam to become a credentialed RD. The timing couldn’t have been better, because a position in Whitworth’s newly formed Health Sciences Department opened up, and I was hired as a lecturer and the tenure-track professor where I have been ever since. I continue to teach courses in nutrition, personal health, sport nutrition, and food systems full-time but relish the opportunity to work with clients one-on-one. Finally, I am also a Wellcoaches Certified Health and Well-being Coach and incorporate coaching skills into my practice.

Elizabeth's Health Journey +

As a dietitian, education, and health and well-being coach, I am constantly learning and incorporating evidence-based information into my own lifestyle habits. While I ran competitively for several years, including multiple marathons, my primary focus now is pursuing a path to flourishing not perfection. One way that I love my body is by letting it move every day. I enjoy running, hiking, cycling, and yoga (though I am the least flexible person on the planet). I think that our relationships impact all aspects of health and having communal meals with others is a great way to foster that. My husband, Tim, is literally a Master Gardener. He grows it, and I enjoy finding creative ways to make meals that taste good and help us feel good.


Meet Lori

Where it all began

Some of my most cherished childhood memories involve cooking and baking alongside my mom, learning to create meals that were both delicious and nourishing. My mother’s philosophy around food for wellness was passed on to me from an early age and helped lay the foundation of my own nutrition philosophy.

As a teenager, I faced challenges with food intolerances and irritable bowel syndrome (IBS), along with struggles related to body image and an unhealthy relationship with food. These experiences, while difficult, sparked a personal journey toward healing my gut and developing a positive connection with food. My healing process ignited a deep passion in me for nutrition and food as medicine. Today, I’m dedicated to helping others support their health and vitality through balanced eating and joyful movement.

Education +

After completing my bachelors in Health Sciences at Whitworth University, I knew nutrition was the career path for me. I wanted to pursue a nutrition program that supported a holistic approach to healthcare. My search led me to Bastyr University in Kenmore, Washington, where I obtained my masters degree in Nutrition Science. At Bastyr, the combination of evidence-based nutrition science with a functional and integrative, holistic approach resonated with my health philosophy of food as medicine. Following the program, I completed my dietetic internship at Beth Israel Deaconess Medical Center in Boston, MA. This experience offered over 1200 practice hours working on nutrition problems with patients with a wide range of illnesses and nutrition goals and prepared me to confidently begin my career as a dietitian. After returning to Washington state and obtaining my national and state licensure, I worked as a clinical dietitian in the acute setting before transitioning to nutrition and wellness counseling with Fuel to Thrive.

Lori's Health Journey +

As a foodie dietitian with IBS and a passion for fitness, I’ve navigated my health journey through challenges and stages, optimizing my nutrition to fuel an active lifestyle and support my gut health. My strength and fitness goals inspire me to continuously learn and refine my approach, and I bring that same curiosity and dedication to my clients. Outside of work, I love to bake, explore the outdoors with my husband and friends, and dive into new health topics and research. Whether I’m hiking, strength training, or enjoying a homemade treat, I believe in a balanced, sustainable approach to nutrition and fitness and look forward to helping others find theirs.


Meet Jessica

Where it all began

As a high school athlete, I struggled with the female athlete triad and got stuck in the headspace that a fast runner should be tall and skinny. I noticed my running performance was quickly going downhill and didn't understand why with all my hard work, my times weren't improving. I later realized that I wasn't fueling my body properly! I have always absolutely loved running and exercising outdoors, and have dedicated my life to learning more and helping others to embrace, push, and fuel their bodies to perform at their best! I enjoy helping push people to improve and see how I can change lives through nutrition and exercise. I have been a personal trainer since 2020 and have fallen in love with seeing my clients improve! Seeing someone's confidence grow and learn their strength always brings a smile to my face!

I attended Colorado State University in Fort Collins, CO where I graduated with my B.S. in Human Nutrition and Food Sciences. Currently, I am enrolled at Washington State University here in Spokane to earn my M.S. in Dietetics and Exercise Physiology. Additionally, I have a diploma in Sports Nutrition from the Institute of Performance Nutrition (IOPN), am a certified personal trainer and nutrition coach through the National Academy of Sports Medicine (NASM), and am a Functional Aging Specialist through the Functional Aging Institute (FAI).

Jessica's Health Journey +

I'm always looking for a challenge. My love for running is always first and foremost for my exercise. While I enjoy all distances, I have always been fond of long distance running. I have done several half, full, and ultramarathons. So far my proudest athletic accomplishment was finishing the Run Rabbit Run 50 mile ultramarathon in Steamboat Springs, Colorado. I hope to eventually finish a 100 mile ultra. My husband has helped to push me over to the triathlon world too. While swimming is not my strong suit, I was able to finish the Boulder 70.3! I plan to do many more Ironman 70.3 competitions and hopefully someday a full Ironman!
